Crustless Quiche

This is a lovely lunch time or summer evening recipe. I had mine with salad but you could have it with a jacket potato, new potatoes, veggies, chips, coleslaw, sweet potato wedges... the possibilities really are endless. 

Serves 4

Ingredients 
For the quiche
- 6 eggs
- 150g of low fat cottage cheese 
For the filling (now this is the exciting bit, you can literally put whatever you like in here so it can be made vegetarian if you wish, here's what I put in mine...)
- half a green pepper, deseeded and finely sliced
- 4 spring onions, finely sliced
- 12 cherry tomatoes, halved
- 2 rashers of bacon, cut into 4cm pieces
- grated cheese (optional, I didn't use it) 

Method
1) Preheat the oven to 180°C/Fan 160°C
2) Lightly spray a 20cm round, shallow baking dish with low calorie cooking spray (I used Aldi's alternative to Frylite) and set aside
3) Spray a mediun frying pan with low calorie cooking spray and place over a medium heat. Add the spring onions, peppers and bacon (or whatever you might be using for your filling) and stir-fry for 8 minutes. 
4) Add the cherry tomatoes to the pan and cook for a further 2 minutes
5) Transfer the mixture to the prepared baking dish, spreading evenly across the base. 
6) Spread the cottage cheese over the top of bacon and veggie mixture.
7) Beat the eggs in a large bowl and season lightly with cracked black pepper to taste (my hand slipped whilst making mine but thankfully I love black pepper!) 
8) Pour the egg mixture over the cottage cheese and sprinkle with grated cheese (optional, but we all know you can never have too much cheese).
9) Place in the oven and cook for 30 minutes or until set and golden. Remove from the oven and allow to rest for 10 minutes before cutting into quarters.
10) Serve with whatever side dishes you fancy! 

This quiche can be eaten hot or cold. I had a slice fresh from the oven but the rest will be clingfilmed and popped in my fridge for lunches over the next few days.
